Homemade Italian Sausage

Serves1 and 1/2 pounds
| Amount | Ingredient | Preparation |
|---|---|---|
| 1 medium sized | yellow onion | minced |
| 3 tablespoons | olive oil | |
| 1/4 cup | fresh chervil | |
| 4 tablespoons | dried oregano | |
| 4 tablespoons | dried basil | |
| 1/2 pound | fennel bulb | minced |
| 1 pound | ground pork | |
| 1/3 cup | garlic | minced |
1. Saute ground pork in olive oil over medium heat until partially brown.
2. Add onions, saute for about five minutes, then add the fennel and continue cooking until both are translucent.
3. Add the garlic, spices, and salt, then saute for another five minutes.
4. Sausage can be used immediately in any recipe that calls for italian/country sausage, or frozen on a cookie sheet and stored in the freezer for several months.
