Basic Beef Stew

| 1 T | dried thyme | |
| 1 t | sugar | |
| 2 T | cooking oil | |
| to taste (broth or bouillon has a lot!) | salt | |
| 6 | bay leaves | |
| 1 1/2 tsp | black pepper | |
| 3 medium, medium dice | potatoes | |
| 4 ribs, 1 inch cuts | celery | |
| 4 cups (or water + beef bouillon) | Beef broth | |
| 4 large, 1/4 | carrots | |
| 6 cloves, brunoise | garlic | |
| 1 large, large dice | onion | |
| 1.5 lbs, chopped into 1 | Beef | |
| 1 1/2 T | worcestshire sauce | |
| 4 T | cornstarch |
1. Cut up onions, garlic and beef
2. Using saute pan, brown beef in cooking oil
3. Add onions and garlic, saute until onions are clear, drain oil
4. Transfer to large stew pot, add beef broth, bay leaves, black pepper, thyme, sugar, worcestshire sauce, and heat to boiling
5. Put on a lid and turn down to simmer for 1 hour, during which cut the rest of the vegetables
6. Add potatoes and celery, plus salt to taste, and let simmer 1/2 hour
7. Add potatoes, let simmer 1/2 hour
8. Mix cornstarch with 1/2 cup hot water, add slowly to pot until stew is correct consistency
9. Let simmer 15 minutes, remove bay leaves, and serve
