Sour Cream Enchiladas

Preparation Time1.5 hours


1 lb. Cheddar cheese shredded
2 cans cream of mushroom soup
16 oz. sour cream
2 small cans olives diced
1 cup fresh cilantro chopped
2 small cans green chili diced
1 whole yellow onion chopped
1 tbsp. garlic powder
2 tbsp. chili powder
1 tbsp. cumin
2 lbs. ground beef
burrito size-10-12 flour tortillas

1. Brown ground beef and onions.

2. Add spices,chilis,olives,soup,sour cream and 3/4 of the cheese. Set aside 1/4 of the filling.

3. Fill tortillas and place in a 13x10x2 baking pan.

4. Pour remaining filling over the top and sprinkle remaining cheese on top.

5. Bake in a 350 F oven for 45 minutes.
