Serves6-8 helpings of pasta
|1 pound fresh, or two cans||tomatoes|
|1, cut in half||yellow onion|
|6-8 cloves, minced||garlic|
|4 whole||bay leaves|
1. Place the stick of butter, the tomatoes, the bay leaves, the garlic, and the onion in a cold pot and just barely cover with water. If using fresh tomatoes, cut into 1 inch pieces first.
2. Simmer the mixture at low heat until the sauce thickens, crushing the tomatoes against the side of the pot periodically.
3. Once cooked, remove the whole onion and the bay leaves. You can either leave the sauce as is, or blend it with a food processor or blender for a more marinara-like sauce.
4. Serve over pasta with salt and pepper to taste.
