1/2 cup, melted unsalted butter
1 1/2 cups, mashed (about 4 bananas) bananas
1/4 tsp salt
1/2 tsp baking soda
1 tsp baking powder
3/4 cup granulated sugar
1 1/2 cup flour
2 large egg
1/2 tsp Vanilla Extract

1. Preheat the oven to 350 degrees and position a rack in the middle. Line a muffin tin with cupcake liners and set it aside.

2. In a medium bowl whisk together the flour, sugar, baking powder, baking soda and salt.

3. In a large bowl mix together the mashed bananas, butter, eggs and vanilla. Add the dry ingredients to the wet ingredients and stir it until it's all just incorporated making sure not to overmix it.

4. Scoop the batter into the prepared muffin pan filling each 3/4 of the way. Bake them for 20 25 minutes until the tops are golden brown and a toothpick inserted into the middle comes out clean. Transfer them to a cooling rack and let them cool completely before you frost them.
