Chocolate Chip Banana Muffins

Serves24-30 muffins

6 bananas
2 1/2 cups flour
1 1/2 cups sugar
1 cup olive oil
3 eggs
2 teaspoons baking soda
1 teaspoon salt
1 1/2 cups Chocolate Chips
1 cup walnuts (optional)
1 cup or pecans (optional)

1. Preheat oven to 350 degrees F. Mash six overripe bananas (black is best), 3 eggs, and 1 cup of olive oil together in a blender or food processor.

2. Combine 2 1/2 cups flour, 1 1/2 cups sugar, 2 teaspoons baking soda, and 1 teaspoon salt in a mixing bowl.

3. Add wet ingredients to dry ingredients and stir until smooth and all ingredients are moistened.

4. Add in chocolate chips and stir.

5. Spoon batter into muffin cups in muffin tin. Bake for 15-20 minutes until they are golden brown and spring back to the touch.
