Sun Dried Tomato and Sausage Risotto

Preparation Time40 minutes


2/3 cup frozen peas optional
3 large hot pork sausages skinned and chopped
5 cups chicken broth
1 1/4 cup arborio rice
3/4 teaspoon dried cilantro
1/8 teaspoon dried oregano
1 tablespoon sun-dried tomatoes chopped
2 fresh garlic cloves diced
1 yellow onion diced
4 tablespoons extra-virgin olive oil
mozzarella cheese shredded garnish
1/4 teaspoon pepper

1. Place onion, oil, and garlic in frying pan on medium heat until the onion is translucent.

2. Add sausage and cook until brown.

3. Add sun-dried tomatoes, cilantro, pepper, and oregano, and let steep.

4. Stir in rice until coated in oil.

5. Pour in a cup of chicken broth, and let the rice absorb it. Repeat until rice is tender.

6. Remove from heat, add mozzarella cheese and microwaved peas on top. Serve.
