Be careful with gluten-free flour mixes for pastas! You have to get a different mix specifically for pasta doughs. All-purpose gluten-free flour doesn't work: too much dough, not enough filling and it breaks apart.

I'm working on my own mix right now. I'm going to use mostly fine rice flours because rice pasta is still gluten-y and easy to work with.
